GRIT CAKES

When life gives you leftover grits (or polenta), make grit cakes. Pour the leftovers into a mini-loaf pan and refrigerate overnight. In the morning, unmold the now solid grit loaf onto a cutting board and cut it into one-third-inch slices. Using a nonstick skillet, fry the slices in butter over medium-high until well browned on both sides. This will take longer than you expect—ten minutes per side is not unheard of. Serve with scrambled eggs, bacon, or leftover shrimp. Grit cakes work better with noncheesy grits; the cheesy ones are easy to burn.
